This soup is inspired by the Mexican chain restaurant, Chipotle. It is a simple, yet delicious and hearty soup made with chicken, vegetables, and a smoky chipotle chili pepper sauce.

To make the soup, first heat the oil in a large pot over medium heat. Add the chicken and cook until browned and cooked through, about 5 minutes. Remove from the pot and set aside.

Add the onion, bell pepper, and celery to the pot and cook until softened, about 5 minutes. Stir in the garlic and cook for an additional minute.

Return the chicken to the pot along with any juices that have accumulated. Add the broth, tomatoes with their juice, chipotle chili pepper sauce, black beans, corn kernels, cumin, salt and pepper. Bring to a simmer and cook for 10 minutes.

Ladle the soup into bowls and top with crispy fried chicken, cheese, sour cream or avocado if desired. Serve warm."

Ingredients:

1 whole fryer chicken, cut into pieces

2 cups all-purpose flour

3 tablespoons paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon black pepper

1/2 teaspoon cayenne pepper, optional

3 tablespoons vegetable oil, divided

2 cups chicken broth or stock

For the Soup:

In a large bowl, combine the flour, paprika, garlic powder, onion powder, black pepper and cayenne pepper. Dredge the chicken in the mixture until it is well coated. In a large skillet over medium heat, heat 1 tablespoon of oil until hot. Add half of the chicken and cook for about 4 minutes per side or until golden brown. Remove from the skillet and set aside on a paper towel-lined plate. Repeat with the remaining chicken.    Reduce the heat to low and add the remaining 2 tablespoons of oil to the skillet. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for an additional minute. Stir in the broth or stock and bring to a boil. Boil for 2 minutes then reduce the heat to low and simmer for 10 minutes.    To serve, place 1 or 2 pieces of chicken in each bowl and ladle some of the broth over top. Serve with some biscuits on the side for dunking! Enjoy!
