Ingredients:

-1 pound boneless, skinless chicken breasts, cut into small cubes

-1 tablespoon olive oil

-1 onion, chopped

-3 cloves garlic, minced

-4 cups chicken broth

-1 (15 ounce) can diced tomatoes, undrained

-1 (6 ounce) can tomato paste

-1 teaspoon sugar

-1 teaspoon dried basil leaves 2 bay leaves ..............................

Instructions:

In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and garlic, and cook until both are translucent. Add chicken broth, diced tomatoes with juice, tomato paste, sugar, dried basil leaves and bay leaves. Bring to a boil.    Reduce heat to low and simmer for 30 minutes.   Add chicken cubes and simmer for an additional 15 minutes or until chicken is cooked through. Discard bay leaves before serving.

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes, undrained

1 tsp. chili powder

1 tsp. cumin Egg-Free Chipotle Ranch Dipping Sauce: ⅓ cup vegan mayo ⅓ cup unsweetened almond milk 2 tsp. adobo sauce from a can of chipotles in adobo sauce 1 tsp. dried oregano 1 tsp. garlic powder ½ tsp. onion powder Salt and pepper, to taste For the soup: In a large pot or Dutch oven over medium heat, add the chicken cubes, onion, and garlic. Sauté for 5-7 minutes until the chicken is cooked through and the onion is translucent. Add the vegetable broth, black beans, corn, diced tomatoes with their juice, chili powder, and cumin. Bring to a boil and simmer for 10 minutes. To make the Egg-Free Chipotle Ranch Dipping Sauce: In a bowl or glass jar, whisk together the vegan mayo, almond milk, adobo sauce, oregano, garlic powder, onion powder salt and pepper until smooth. Set aside. Serve the soup with a side of Egg-Free Chipotle Ranch Dipping Sauce and some tortilla chips or bread for dipping. Enjoy!

  2. Add the corn, black beans, salsa, chili powder, cumin, garlic powder, salt, and pepper. Stir well to combine.

  3. Add the shredded chicken and green onions. Simmer for 10 minutes until heated through.

  4. Serve with sour cream, shredded cheese, avocado slices, and jalapeno peppers if desired. Enjoy!
