Classic Butternut Squash Soup

Ingredients:

  • 1 butternut squash, peeled and cubed

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 2 cups vegetable broth

  • pinch of salt and pepper to taste (optional)

Instructions:

) In a large pot over medium heat, sauté onions and garlic in olive oil until softened. Add butternut squash and vegetable broth. Bring soup to a boil, reduce heat and simmer for about 20 minutes or until squash is soft. Season with salt and pepper to taste. Use an immersion blender to blend soup until smooth or alternatively transfer soup to a blender in batches and blend until smooth. Serve hot with some crusty bread on the side. Enjoy!

3> ## Creamy Vegan Wild Rice SoupIngredients:

  • 1 tablespoon olive oil or avocado oil
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • 6 cups vegetable broth or water+ more if needed as needed later on see notes**
  • 2 cups uncooked wild rice see notes+ more if needed as needed later on see notes*
  • 2 cups cooked cannellini beans or one can drained and rinsed* see notes+ more if needed as needed later on see notes*

Instructions: Heat oil in a large pot over medium heat. Add onion, garlic, thyme, smoked paprika, cayenne pepper (if using), and salt & black pepper to taste. Sauté for 5 minutes until onions are softened. Stir in broth or water, wild rice, beans****, and bring soup up to a boil. Reduce heat to low cover and simmer for around 50 minutes – 1 hour until rice is tender (check occasionally and add more liquid if necessary). If you have an immersion blender (or Vitamix), blend soup right in the pot until creamy. Otherwise carefully transfer batches of soup into a blender jug/pot – taking care not to fill it too high otherwise it might explode from the steam (been there!) – blend until creamy then return blended soup back to the pot for serving. Ladle into bowls and enjoy!

Notes: I used Better than Bouillon veggie broth paste which gives quite concentrated flavor so use lower amount of broth OR water accordingly if using boxed/canned broth If using uncooked long grain white rice instead of wild rice increase cook time by 15 – 20 minutes If short on time you can use 2 cups pre-cooked wild rice from store bought or leftover cooked rice Cooked white cannellini beans also work well here in place of black beans ***You can sub any type of prepped bean here such as kidney beans, chickpeas etc
